So I tried a new product last night – it is a package mix for Chi-Chi’s Fiesta Sweet Corn Cake. I found it at Publix next to all the Mexican food and thought I would give it a try! SO YUMMY! It was very easy. You just mix in melted butter, water and a can of cream corn. It says to put in a loaf pan for 45 mins, but I put it in a muffin pan and baked for about 20 mins and it turned out great!
I also saw on a website that it is gluten-free, so for my friends that can’t have gluten, maybe this will be a fun treat!
It was a great compliment to our chicken, black beans and yellow rice!
